Edinburgh & the Lothians

Edinburgh has more gin being distilled inside its city boundary than anywhere else in Scotland, and the sites are half the appeal: a former veterinary school, a railway arch, a shorefront warehouse in Leith. The Lothians around it add North Berwick and Linlithgow. This is the easiest region in the country to visit two or three distilleries on foot in a day.

Now housed in restored Victorian railway arches near Waverley, with a distillery, bar and tours under the one roof. One of the names that started the modern Scottish gin run.

In the old Royal (Dick) Veterinary School at Summerhall — the first exclusively gin distillery in Edinburgh for a very long time, working from a recipe written out in Bombay in 1947.
