Speyside is whisky country first, and that shapes its gin: the distilleries here already had the stills, the water and a century of knowing how to run them. Several Speyside gins are made at malt distilleries whose names you will recognise from the whisky shelf, on copper that was not designed for juniper and turns out to suit it.

A Speyside malt distillery dating to the nineteenth century, where Caorunn is made in a copper berry chamber rather than a conventional still basket. The name is Gaelic for rowan.
