The Highlands cover more of Scotland than anywhere else on this site, and the gin follows the ground: heather and bog myrtle from the moor, rowan and pine from the hillside, and in Caithness a windbreak of sea air behind everything. These are small operations a long way from a motorway, which is exactly why they taste of somewhere.
