French 75

For when it is a proper occasion.

Named after a First World War field gun, on the basis that it hits with much the same force. Gin, lemon, sugar and something sparkling.

You need

Serves one

  • 30ml gin
  • 15ml fresh lemon juice
  • 10ml sugar syrup
  • Chilled sparkling wine to top

Method

  1. Shake the gin, lemon and sugar hard with ice.
  2. Strain into a chilled flute.
  3. Top with sparkling wine.
  4. Garnish with a long lemon twist.

Our suggestion: this is the drink for a floral or citrus-led gin. A heavily foraged, resinous gin fights the wine.
